Taste surprisingly large cuts of truly excellent sashimi

with high-quality sake from Yamagata.

A tavern accredited as “a restaurant of locally produced food” by Yamagata City. Its specialty is an assortment of sashimi using fresh seafood from the Pacific Ocean and the Japan Sea. They are sliced into approximately 2 cm-thick and 8 cm-long cuts so that customers can fully enjoy the taste of the ocean’s bounty. There are also a wide range of foods nurtured by the rich nature of Yamagata such as Yamagata beef and vegetables.

Koichi Sato, the shop owner. “Yamagata is a rare place which is close to both the Japan Sea and the Pacific Ocean, so there are a wide variety of fish in abundance, and all of them are fresh”, he told us.

You may want to order 5 kinds of sashimi (1,900 yen per person) each time you visit Akiyoshi. The ample amount served for one person is enough to share with a friend.

Imoni (950 yen). Besides the famous locally-raised Yamagata beef, the ingredients such as konnyaku, burdock root, and taro are also all from the prefecture. The taste is drawn out from the ingredients by stewing slowly, and this creates a smooth, melt-in-your-mouth texture.

Mottekiku (480 yen). This is a dish of boiled edible chrysanthemum with soy sauce dressing. The sourness of the dressing and the crisp texture are irresistible.

The restaurant provides as many as 50 brands of sake, which are all from Yamagata. You can taste a rare glass of sake, which you may not be able to get in an urban area.
