Kawaya Kego

The specialty chicken skin is prepared by repeatedly roasting the skin with and without sauce, which takes as long as 6 days. The skin loses excessive oil, and the surface becomes crispy while the inside is soft and moderately springy. It is delicious with the sauce sunk deep into the skin. There are a variety of yakitori options such as “giblets” and “pork back rib”.

Most customers order chicken skin (100 yen) in a 10 piece unit. The low-fat base of the neck part has a light taste so anybody can easily finish 10 pieces. Cabbage comes for free, which is unique in Fukuoka. Cabbage refills are also free.

3 minute walk from the Seitetsu bus stop “Kegocho”. The shop is in the Kego area, a district known for sophisticated restaurants. There are counter seats where you can watch the skilled chef, as well as table seats and Horigotatsu seats. This popular restaurant is crowded with people every day, so you need to call ahead to reserve your seat early.
