A surprising texture which draws a sharp line from other chicken skewers!

The specialty chicken skin is prepared by repeatedly roasting the skin with and without sauce, which takes as long as 6 days. The skin loses excessive oil, and the surface becomes crispy while the inside is soft and moderately springy. It is delicious with the sauce sunk deep into the skin. There are a variety of yakitori options such as “giblets” and “pork back rib”.

Sparked the local craze for Udon Izakaya.

Though Fukuoka is known for ramen, Udon Izakaya is now booming there. The menu, which fills up a whole wall, displays more than 80 kinds of food including Unzen ham cutlet and stewed beef tendon and various types of alcohol. The last dish to finish the meal is, of course, homemade and handmade udon (thick wheat noodles). If you like, toppings such as goboten are available.

Rich chicken and fish soup which goes well with homemade noodles.

Proficient RAMEN shop which appeared in the “Michelin Guide to Fukuoka & Saga 2014”. Specially made rich chicken noodles (850 yen, limited to 15 dishes per day), Chinese noodles (750 yen) using curly noodles, and Niku Uchu (meat universe) (700 yen) using fettuccine-type noodles are served during lunch time. There are only 7 counter seats, so sometimes there is a line in front of the restaurant.

Iron pan gyoza (chiaotzu) of an old establishment loved for 50 years.

A popular restaurant where people stand in line before it even opens. Bite-sized Hakata gyoza served on a hot iron plate is its specialty. Gyoza skins and filling are all handmade in the restaurant. The thin skin is light and crisp, and the sweetness of gravy and vegetables spread in your mouth. Tender simmered chicken wings are delicious and easily fall apart.

A Fukuokan’s favorite, a plate of spotted mackerel.

Come here to taste fresh fish at a reasonable price. Local people frequently come to this casual fish restaurant established 41 years ago. More than 20 kinds of plates are served using seasonal fish like mirin-seasoned sablefish, boiled yellowtail with salt, and butter-flavored fresh grilled salmon. Popular among these is the plate meal of spotted mackerel (1,300 yen) which uses chub mackerel, whose taste starts becoming richer at the beginning of Fall. It is perfection with Masafuku’s original sesame sauce!

Unlike the usual whitish chicken boiled plain, this chicken boiled plain specialty restaurant serves them with clear soup. For “chicken boiled plain”, start by tasting the soup, then taste the legs, then breast, wing, meat balls, and finally the vegetables to enjoy the difference in flavors. Don’t worry if you’re unfamiliar with this type of dining, staff will serve each dish for you.
