This popular rice is carefully cooked on a traditional oven using Koshihikari brand rice cultivated by a contracted farmer in Iwamuro and high-quality spring water from Gosen. While the premium rice is as fragrant and springy as you’d expect, the main dish is made with a little ingenuity. The ingredients are cooked over a charcoal fire with homemade koji used for pickling the fish. Enjoy the best marriage of flavors where umami and sweetness are combined.

Grilled koji-marinated king salmon (1,296 yen) gets its delicious flavor from soaking the salmon in homemade koji overnight.

Mr. Ishida, the owner. He taught himself the laborious cooking methods showcased here, such as how to cook rice on a traditional oven and how to grill fish over a charcoal fire.

Rice carefully cooked by tending the fire in the traditional oven to adjust the heat just-so. Eat as much rice as you like during lunch time.
